Ingredients
  • 1 ½ lb. raw top sirloin steak

  • 3 tbsp. avocado oil

  • 3 tbsp. coconut aminos (or soy or tamari sauce)

  • 3 tbsp. Worcestershire sauce

  • 3 tbsp. balsamic vinegar

  • 2 tsp. dijon mustard

  • 3/4 tsp. granulated garlic (or 3 garlic cloves)

  • 3/4 tsp. onion powder

  • 3/4 tsp. black pepper

  • 1/2 tsp. salt (optional)

  • ½ lb. baby potatoes, halved

  • ¼ tsp. dried rosemary

  • 1 ½ lb. fresh asparagus, trimmed

  • 1 tbsp. avocado oil

  • 2 tbsp. grated parmesan cheese (can use dairy-free)

  • ¼ tsp. black pepper

Instructions

Steak:

  1. Combine ingredients for steak marinade. Add steaks and let sit, covered, at room temperature, for half an hour to two hours. 

  2. Preheat a cast iron skillet or fry pan over medium-high heat. Cook steaks 4-5 minutes per side for medium-rare. Let steaks rest for 10-15 minutes before slicing

Potatoes:

  1. Preheat oven to 400 degrees F. 

  2. Wash baby potatoes and halve or quarter larger potatoes. 

  3. Toss with avocado oil and spices.Spread out potatoes on a large baking sheet (I line mine with parchment for easier cleanup) and roast 40-45 minutes.

Asparagus:

  1. Preheat oven to 400 degrees F. 

  2. Wash and trim fresh asparagus. 

  3. Toss with avocado oil, parmesan, pepper, and salt. 

  4. Spread out asparagus on a large baking sheet 

  5. roast 15-20 minutes. 

  6. Divide steak, potatoes, and asparagus evenly between six plates or meal prep containers.
